Western Omelet Pie Recipe
- 3 tbsp. oil
- 1 c. onion minced
- 3 1/2 c. frzn hash brown potatoes
- 1 1/2 teaspoon salt
- 2 tbsp. butter
- 1 green pepper, minced
- 2 tbsp. minced parsley
- 1 1/4 c. lowfat milk
- 4 Large eggs, beaten
- 1 c. grated Swiss cheese
- In skillet heat oil and add in 1/4 c. onion, sauteing till soft.
- Add in frzn hash browns and 1 tsp.
- salt.
- Cook over medium heat till potatoes are soft.
- Pat into bottom and sides of 9-inch pie plate, forming crust.
- Bake 20 min.
- In the same skillet, heat butter; add in pepper, remaining onions, and parsley; saute/fry.
- In medium bowl combine Large eggs, lowfat milk, and 1/2 tsp.
- salt.
- Sprinkle crust with peppers, onions, and cheese.
- Pour in egg mix and bake 30 min till set.
