Healthy Chicken and Greens Salad With Creamy Chutney Dressing

  1. In a large mixing bowl, place the mixed greens.
  2. In a blender or small bowl, whisk together the yogurt and chutney until smooth.
  3. Season with salt and pepper to taste.
  4. Drizzle over the greens and toss throughly.
  5. Divide the greens among 4 plates.
  6. Top each with cucumber, bell pepper, chives and coriander.
  7. Toss gently.
  8. Sprinkle the diced chicken evenly over the salads and garnish each with 2 pineapple chunks and a cherry tomato.
  9. Offer croutons at the table, as desired.
