Pea Pod Roll-Ups
- 6 ounces snow pea pods (fresh)
- 13 cup salmon cream cheese spread
- 1 -2 teaspoon fresh dill weed, chopped
- 24 pieces red bell peppers or 24 pieces cucumbers or 24 pieces carrots (cut to 1/2-inch x 1/4-inch) or 24 pieces red onions (cut to 1/2-inch x 1/4-inch)
- Heat 3 cups of water to boiling; add pea pods.
- Cook uncovered 1 to 2 minutes, or until bright green.
- Drain.
- Immediately rinse with cold water; drain.
- Dry with paper towels.
- Spread cream cheese over each pea pod.
- Sprinkle with dill weed.
- Place 1 piece of bell pepper on center of each pea pod; bring ends of pea pod over filling, overlapping in center.
- Secure with toothpick.
