Pea Pod Roll-Ups

  1. Heat 3 cups of water to boiling; add pea pods.
  2. Cook uncovered 1 to 2 minutes, or until bright green.
  3. Drain.
  4. Immediately rinse with cold water; drain.
  5. Dry with paper towels.
  6. Spread cream cheese over each pea pod.
  7. Sprinkle with dill weed.
  8. Place 1 piece of bell pepper on center of each pea pod; bring ends of pea pod over filling, overlapping in center.
  9. Secure with toothpick.
