Mango Nut Bread Recipe
- 1/2 c. butter
- 3/4 c. sugar
- 2 Large eggs
- 1 c. mango, minced finely or possibly pureed
- 1 tbsp. lemon juice
- 2 c. flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla
- 1/2 c. minced nuts
- 1/2 c. minced raisins
- Cream together butter and sugar; beat in Large eggs.
- Stir in mango and lemon juice.
- Combine dry ingredients and stir into mango mix.
- Add in vanilla, nuts, and raisins.
- Bake in a greased loaf pan at 375 degrees for 50 min or possibly till a wooden skewer inserted in the center of cake comes out clean.
- Cold on wire cake racks.
- This bread freezes very well.
