Salmon, Capsicum & Olive Bruschetta

  1. Combine salmon, capsicum, olives, basil and vinegar in a medium bowl.
  2. Preheat a char-grill to moderate.
  3. Spray both sides of bread with oil.
  4. Grill 1 minute each side, or until toasted.
  5. Rub bread with garlic.
  6. Spread bread with ricotta.
  7. Transfer to a serving plate.
  8. Top bread with salmon mixture.
  9. Serve at once.
