Washington Potatoes and Lettuce
- 6 slices bacon
- 1/2 cup mild vinegar
- 1 tbsp. sugar
- 2 cups mashed potatoes
- 1 to 2 qt. shredded lettuce
- Dice bacon and fry slowly until crisp and brown.
- Pour off part of the fat and add the vinegar and sugar.
- Place potatoes in the bottom of large pot; cover with the shredded lettuce.
- Pour hot bacon and vinegar mixture over lettuce.
- Cover; let lettuce wilt some.
- Then stir and serve immediately.
