Easy Breakfast Pizza
- 1 can Pillsbury Refrigerated Pizza Crust
- 8 eggs
- 1/4 cup half and half
- Salt and pepper, to taste
- 2 tbsp. butter
- 8 oz. cream cheese, room temperature
- 1 can (3 oz.) real bacon bits
- Sliced fresh tomatoes, if desired
- Heat oven to 425F.
- Butter a 12-inch pizza pan or a cookie sheet.
- Unroll dough; place on buttered pan.
- Starting at center, press out dough with hands (to fit pizza pan or into a 12-inch round on cookie sheet).
- Bake 6 to 7 minutes or until crust begins to brown.
- Meanwhile, in a medium bowl, combine eggs, half and half, salt and pepper; beat well.
- In a large skillet, melt butter over medium heat.
- Add egg mixture, cook and stir until cooked but still moist.
- Remove from heat.
- Stir together cream cheese and bacon.
- Set aside.
- Spoon cooked egg mixture over partially baked crust.
- Drop cream cheese mixture by teaspoonfuls over eggs.
- Arrange tomatoes slices on top, if desired.
- Bake for an additional 8 to 12 minutes or until toppings are heated through and crust is golden.
