Corned Beef Salad
- 1 tsp. plain gelatin
- 1/4 c. cold water
- 1 small pkg. lemon jello
- 1 c. boiling water
- 1/2 c. cold water or pickle juice
- 1 (12 oz.) can corned beef
- 3 hard-boiled eggs, cut up fine
- 1 c. diced celery
- 1/2 c. diced green pepper
- 2 Tbsp. diced pimento
- 1 Tbsp. grated onion
- 1 small bottle stuffed olives, sliced
- 1/2 c. diced sweet pickle
- 1/2 to 3/4 c. salad dressing or mayonnaise
- 1 tsp. prepared mustard
- 1 Tbsp. Worcestershire sauce
- Put gelatin in 1/4 cup cold water.
- Dissolve jello in 1 cup of boiling water.
- Put these ingredients plus 1/2 cup cold water or pickle juice, corned beef (broken into several pieces), salad dressing, mustard and Worcestershire sauce into blender.
- Mix in blender, then add all other ingredients.
- Pour into rectangular Pyrex dish.
- Chill overnight in refrigerator.
- Serves 10.
