Fresh Peach Pie

  1. To prepare crust: Combine all crust ingredients and mix well.
  2. Divide dough in half and press into 2 greased 9-inch square baking pans.
  3. Bake at 400 for 10-15 minutes.
  4. To prepare filling: Combine water, sugar, cornstarch and syrup in a saucepan.
  5. Bring to a boil and cook until thickened and clear, stirring constantly.
  6. Remove from heat and measure exactly 4 tablespoons peach gelatin into mixture.
  7. Stir and cool slightly.
  8. Core, peel and dice peaches.
  9. Fold into gelatin mixture.
  10. Divide mixture evenly between 2 baking dishes.
  11. Cool and serve.
