Sponge Cake
- 12 lb softened margarine
- 1 cup granulated sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla essence
- 4 eggs
- 3 teaspoons baking powder
- 2 cups sifted all purpose flour
- In a large bowl, place margarine, sugar, cinnamon and essence and cream for about 15 minutes until fluffy.
- Add eggs one at a time, then stir in the baking powder.
- Fold in flour.
- Pre heat oven to 350 degrees.
- Grease an eight or nine inch cake pan and then dust lightly with a little flour.
- Pour batter into pan and bake for 40 minutes or until middle springs back and the sides leave the pan.
- (a little trick insert a tooth pick into cake and if it comes out clean it is done).
- Let cool thoroughly in pan and then remove.
