Cantaloupe Soup Recipe
- 4 x Ripe cantaloupes, cut in chunks
- 6 ounce Orange juice
- 1/4 x -(up to)
- 1/3 c. Honey
- 1/2 x -(up to)
- 1 tsp Cinnamon
- 1/2 pt Whipping cream
- 1/2 c. Calvados (optional)
- Puree cantaloupe in food processor or possibly blender.
- Add in orange juice, honey, cinnamon, whipping cream and Calvados.
- Chill.
- May be served in cantaloupe halves with mint sprigs for garnish.
- Yield: 6 servings.
