Pickled Pigs Feet Recipe

  1. Place clean pigs feet into 4 qt pot.
  2. Cover with cool water; bring to boil.
  3. Simmer till meat is fairly tender.
  4. Skim off foam occasionally.
  5. Cold for 8 to 10 hrs.
  6. Drain, reserving liquid and place meat into jars.
  7. Combine 2 1/4 c. of liquid and remaining ingredients.
  8. Bring to boil and simmer for a few min.
  9. Pour over pigs feet.
  10. Cold and chill.
  11. Serve cool.
  12. VARIATION: Other parts of pig such as ankles, ears, tongue and heart may be substituted for feet.
