Fajita Queso Chicken Burgers
- 2 lb. lean ground chicken
- 3/4 cup chopped green peppers
- 1/2 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. TACO BELL Fajita Seasoning Mix
- 1/2 cup plus 2 Tbsp. RO*TEL Diced Tomatoes & Green Chilies, undrained, divided
- 1/2 lb. (8 oz.) VELVEETA
- 8 flour tortillas (8 inch)
- Heat greased grill to medium-high heat.
- Mix chicken, peppers, onions, fajita seasoning and 2 Tbsp.
- tomatoes just until blended; shape into 8 balls.
- Cut VELVEETA into 16 cubes.
- Press 2 VELVEETA cubes into center of each meatball; flatten into 1/2-inch-thick rectangular patty.
- Grill 5 to 6 min.
- on each side or until done (160 degrees F).
- Meanwhile, cook remaining tomatoes until heated through.
- Place burgers on tortillas; top with tomatoes.
- Fold in half.
