Khao Pod Tod
- 1 cup Tempura Flour
- 1 Tablespoon Sugar
- 1/4 teaspoons Salt
- 1/4 teaspoons White Pepper
- 18 teaspoons Cayenne Pepper
- 23 cups Cold Water, Sparkling Water, Or Club Soda
- 1 whole Egg
- 1/2 teaspoons Vinegar
- 2 cups Sweet Corn Kernels
- 1/2 cups Chopped Green Onions
- 2 Tablespoons Oil, For Frying
- Blend flour, sugar, salt, white pepper and cayenne pepper in a large bowl.
- Add water, egg and vinegar to the bowl and whisk to combine.
- Mix in corn and green onions.
- Heat the vegetable oil in a heavy large skillet over medium heat.
- Drop batter by 1/4 cupfuls into the skillet.
- Cook cakes until brown and cooked through, about 3 minutes per side.
- Transfer to a baking sheet.
- Serve with sweet and sour dipping sauce.
