Salsa Meatloaf Recipe Darrel5
- 2 lb. ground meat
- 1 onion; chopped
- 1 bell pepper; chopped
- 3 cups chunky salsa (reserve 1 cup)
- 2 eggs
- 1 cup oat meal
- 2 jalapeno peppers; chopped
- 1 can (14 ounces) tomato sauce
- In a large bowl, mix all ingredients, reserving 1 cup for topping.
- Transfer to baking pan and shape into loaf.
- Place in oven and bake 1 hour.
- Spread the remaining salsa on top of meatloaf and cook ten more minutes.
