Alligator Stewed In Sauce Piquant Recipe

  1. In a saucepan, heat the extra virgin olive oil.
  2. Season the alligator meat with Emeril's Essence.
  3. When the oil is warm, sear the alligator meat.
  4. Add in the onions, green onions, celery, bell peppers, jalapenos, and garlic.
  5. Saute/fry for 2 min.
  6. Add in the herbs and continue sauteing for 1 minute.
  7. Stir in the tomatoes and stock.
  8. Season with cayenne, salt and pepper.
  9. Simmer the sauce for about 30 min or possibly till the alligator meat is tender.
  10. Stir in the butter.
  11. Remove remove 2 c. of the sauce and puree till smooth and set aside.
  12. This is a sauce for the "Whole Roasted Chicken Stuffed With Dirty Rice" (the recipe for that is also included in this collection).
  13. Spoon the remaining alligator sauce piquant over white rice in a shallow bowl.
  14. Garnish with green onions and Emeril's Essence.
  15. This recipe yields 4 appetizer servings.
