Mexican Pancakes

  1. Prepare pancake mixture following packet instructions.
  2. Preheat medium sized frying pan and spray lightly with oil.
  3. Pour one cup of mixture per serve and flatten slightly.
  4. While pancake is cooking, place a tablespoon of corn onto the uncooked surface.
  5. Flip over once set.
  6. Continue this process until mixture is finished.
  7. Heat oil in a pan, add onion and cook for 2 minutes.
  8. Add minced beef, cook for 5 minutes until brown.
  9. Stir through tomato paste and spices, cook for 1 minute.
  10. Add salsa, stir until heated through.
  11. Spoon meat filling onto the pancakes, top with sliced avocado and a dollop of Philly*.
  12. Serve immediately.
