Mexican Pancakes
- 1 packet Orgran Buckwheat Gluten, wheat free pancake mix
- 275g can corn kernels
- 1 tablespoon oil
- 1 onion, chopped
- 500g lean beef mince Safeway 1 lb For $5.99 thru 02/09
- 2 tablespoons tomato paste
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 cup salsa
- 1 avocado, sliced
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- canola oil spray
- Prepare pancake mixture following packet instructions.
- Preheat medium sized frying pan and spray lightly with oil.
- Pour one cup of mixture per serve and flatten slightly.
- While pancake is cooking, place a tablespoon of corn onto the uncooked surface.
- Flip over once set.
- Continue this process until mixture is finished.
- Heat oil in a pan, add onion and cook for 2 minutes.
- Add minced beef, cook for 5 minutes until brown.
- Stir through tomato paste and spices, cook for 1 minute.
- Add salsa, stir until heated through.
- Spoon meat filling onto the pancakes, top with sliced avocado and a dollop of Philly*.
- Serve immediately.
