Onion Salad

  1. Combine onions, kidney beans and the peppers in a large shallow dish.
  2. Toss and set aside.
  3. Combine vinegar, cilantro and chili powder in a small bowl; stir well.
  4. Pour over vegetables and toss to coat.
  5. Cover and refrigerate for at least 8 hours, or overnight, stirring occasionally.
  6. Toss before serving.
