Black Walnut Christmas Cake Recipe
- 1/2 c. Butter
- 4 x Large eggs, separated
- 2 c. Flour, sifted
- 3/4 tsp Salt
- 1 c. Sugar
- 1 tsp Vanilla
- 2 tsp Baking pwdr
- 1/2 c. Lowfat milk
- 1 c. Black walnuts, fine minced
- Cream butter and sugar till light and fluffy.
- Beat in egg yolks all at once.
- Add in vanilla.
- Sift dry ingredients together.
- Set aside 1 c. of the dry ingredients.
- Add in the remaining flour mix and the lowfat milk in small portions, alternately, mixing well with each addition, starting and ending with an addition of the dry ingredients.
- Mix together, the reserved flour and the nuts, and stir into the batter, mixing just till blended.
- Beat the egg whites till stiff, but not dry.
- Fold them into the batter.
- Bake in a 9 X 5 X 3" greased and floured loaf pan, or possibly 3 qt mold at 350 degrees about 50 to 60 min, or possibly till done.
- Frost with your favorite icing.
