Spicy Barbecued Spareribs

  1. Preheat the oven to 350F.
  2. Stir together 1 teaspoon salt and 1/2 teaspoon pepper.
  3. Sprinkle over the spareribs and rub in thoroughly.
  4. Place the coated ribs in a shallow roasting pan.
  5. Pour the chicken stock over the ribs and place the ribs in the oven.
  6. Cook for 1 1/2 hours or until tender.
  7. Meanwhile, prepare the barbecue sauce.
  8. Mix together the vinegar, honey, ketchup, mustard, paprika, hot pepper sauce, garlic, and the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper in a small saucepan.
  9. Simmer over low heat for 15 minutes.
  10. Remove the spareribs from the oven and place them in a broiling pan.
  11. Brush the spareribs with the barbecue sauce and return to the oven on the lowest rack.
  12. Set the oven to low broil, and broil the spareribs for 30 minutes, brushing frequently with the sauce.
  13. To tell when theyre done, pierce the meat between the bones with a fork.
  14. If the fork comes out easily, the meat is done.
