Pomegranate Spinach Salad
- 1 (6 ounce) package Baby Spinach
- 12 cup low-fat swiss cheese
- 13 cup slivered almonds, toasted
- 12 cup pomegranate seeds
- 3 tablespoons canola oil
- 2 tablespoons sugar
- 2 tablespoons vinegar
- 14 teaspoon poppy seed
- 14 teaspoon salt
- 18 teaspoon ground mustard
- In a salad bowl, combine spinach, cheese, almonds, and pomegranate seeds.
- In a blender, combine the oil, sugar, vinegar, poppy seeds, salt, and mustard.
- Process until blended.
- Just before serving, drizzle dressing over the spinach and toss to coat.
