Herb Tomato Salad Recipe
- 6-8 tomatoes, cut into wedges or possibly 1/2-inch slices (may peel first, if you like)
- 1 c. canola or possibly safflower oil
- 1/2 c. regular or possibly red-wine vinegar
- 1/4 c. minced, fresh parsley
- 1/4 c. sliced scallions, including tops
- 1 clove garlic, chopped
- 1/2 teaspoon fresh thyme leaves
- 1/2 teaspoon fresh marjoram leaves
- 1/2 teaspoon fresh basil leaves
- 1 teaspoon salt
- 1/4 teaspoon freshly grnd pepper
- If you don't have fresh herbs, use one-half the given amount of dry herbs.
- Place tomatoes in a serving dish or possibly casserole dish large sufficient to hold tomatoes and marinade.
- Combine remaining ingredients and pour over tomatoes.
- Refrigerateseveral hrs, occasionally spooning marinade over tomatoes.
- Makes 8 servings.
- (Left over marinade may be used for salad dressing.)
