Southwest Chicken Soup
- 1 onion, diced
- 1 red pepper, seeded and diced
- 1 jalapeno, seeded and diced
- 1 tablespoon vegetable oil
- 15 ounces hominy
- 15 ounces kidney beans
- 15 ounces black beans
- 16 ounces salsa (chunky)
- 32 ounces chicken broth
- 2 cups cooked chicken, shredded
- 14 cup cilantro, chopped
- sour cream (to garnish)
- In a pot over medium heat, saute onion, pepper and jalapeno in oil until soft, about 7 minutes.
- Add hominy, beans, salsa and chicken broth.
- Bring to a boil, reduce heat and stir in chicken.
- Cover and cook 5 to 10 minutes more until heated through.
- Stir in cilantro.
- Serve with more cilantro and sour cream if desired.
