Southwest Chicken Soup

  1. In a pot over medium heat, saute onion, pepper and jalapeno in oil until soft, about 7 minutes.
  2. Add hominy, beans, salsa and chicken broth.
  3. Bring to a boil, reduce heat and stir in chicken.
  4. Cover and cook 5 to 10 minutes more until heated through.
  5. Stir in cilantro.
  6. Serve with more cilantro and sour cream if desired.
