Ajo Blanco (Cool Garlic And Almond Soup) Recipe

  1. Place almonds and garlic in food processor and blend till very fine.
  2. Add in sherry vinegar and grapes and bread and blend till smooth.
  3. With machine running, drizzle in the extra virgin olive oil first and then the water.
  4. Strain in a soup tureen and season pretty aggressively.
  5. Drizzle sherry vinegar on to bowls of soup and garnish with grapes.
  6. This recipe yields 4 appetizer servings.
