Paradise Found Fruit Salad
- 1/2 small ripe pineapple, peeled, cored, and cut into 1/4 inch chunks
- 2 ripe mangos, peeled, pitted, and cut into 1/4 inch slices
- 1 cup unsalted macadamia nuts, chopped
- 1/4 cup sweetened shredded coconut, toasted
- 2 to 4 tablespoons simple syrup (recipe is in my profile)
- Toast the coconut in a small skillet over medium heat, stirring occasionally, until the shreds are lightly browned,about 6 minutes.
- Layer pineapple and mango in a serving bowl.
- Top with nuts and coconut and drizzle with syrup.
- Toss and serve.
