Cottage Cheese Pie
- 1 1/2 cups cottage cheese
- 4 tablespoons butter melted
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 tablespoon flour, all-purpose
- 1 each lemon zest
- 2 large eggs
- 1/2 cup raisins, seedless
- 1/2 cup nuts chopped
- 1/4 cup milk
- 1 each pie shell (9 inch)
- Press the cheese through a sieve 2 times.
- Add the butter, sugar, salt, flour, lemon rind, unbeaten egg yolks, chopped raisins, nuts and milk.
- Stir well.
- Beat the egg whites until stiff.
- Fold into cheese mixture.
- Pour into the pie shell.
- Bake in moderately hot oven (400 F) for 30 minutes or until browned and firm.
