Flax Muffins
- 1 cup almond meal
- 1 cup flax seed meal
- 2 teaspoons baking powder
- 14 teaspoon salt
- 12 cup coconut oil (melted) or 12 cup any oil or 12 cup butter
- 4 eggs
- 13 cup water
- artificial sweetener
- 12 cup walnuts
- 14 teaspoon xanthan gum (optional)
- Preheat oven to 350F.
- Butter a 12 hole muffin tin.
- Mix dry ingredients together well.
- Add wet ingredients and mix thoroughly.
- fold in walnuts.
- Put in muffin tins (about 1/2 to 2/3 full) and bake for about 20 minutes.
