Honey Tortoni
- 1 cup fine dry breadcrumb
- 23 cup flaked coconut
- 14 cup chopped almonds
- 2 tablespoons butter, melted
- 2 tablespoons sugar
- 2 cups Cool Whip or 2 cups whipped cream
- 14 cup honey
- Combine bread crumbs, coconut and almonds in a 9 x 13" pan and toast at 450F until golden, taking care not to scorch.
- Stir in butter and sugar; chill.
- Blend Cool Whip and honey; add crumb mixture and stir until just blended.
- Spoon into paper or foil baking cups and freeze until firm or overnight.
- For parfait version, alternate layers of crumb mixture and whipped topping; freeze.
