7 Up Lemon Cheesecake With Strawberry Glaze Recipe

  1. CRUST: Combine well the graham cracker crumbs, powdered sugar, cinnamon, and melted butter.
  2. Press onto bottom and partway up sides of buttered 9" springform pan; chill.
  3. FILLING: Soften unflavored gelatin in 1/4 c. 7-up for 4 min.
  4. In a saucepan combine pie filling, sugar, beaten Large eggs and water.
  5. Blend well.
  6. Add in 1-1/4 c. 7-up and bring just to a boil over medium heat stirring constantly; remove from heat.
  7. Stir in softened gelatin; cold 3 min.
  8. Add in 1/2 c. of this hot mix to softened cream cheese; mash together.
  9. Mix together with remaining 7-up mix and stir till well blended.
  10. Turn into chilled crust and refrigeratefor at least 8 hrs.
  11. Remove from pan and add in topping.
  12. TOPPING: Brush top of chilled cheesecake with melted jelly.
  13. Arrange strawberried upright on cake and spoon any remaining melted jelly over them.
