Aunt Kizzy's Macaroni And Cheese Recipe

  1. Heat oven to 350 degrees.
  2. Cook the macaroni in plenty of rapidly boiling lightly salted water till tender, about 12 min.
  3. Drain.
  4. Heat the butter in a saucepan over medium heat and whisk in the flour.
  5. Cook, stirring, till the raw flour smell goes away, 2 to 3 min.
  6. Stir in the lowfat milk and cook till smooth.
  7. Add in 3 1/2 c. Cheddar, seasoned salt, white pepper and food coloring and stir till the cheese melts, about 5 min.
  8. Stir in the macaroni.
  9. Pour into an 8-inch baking dish, sprinkle with the reserved 1/2 c. of Cheddar and cover the dish with aluminum foil.
  10. Bake 30 min, then remove the foil and bake till lightly browned on top, about 30 min more.
  11. This recipe yields 4 servings.
