Best Ever Black Bean Soup Recipe
- 3 lb Beef bone
- 3/4 lb Shin beef
- 3 lb Ham shank, cut up, with bone and rind
- 3 whl cloves
- 3/4 tsp Black peppercorns
- 1/4 tsp Celery seed
- 2 1/2 c. Dry black beans
- 1 c. Minced onion
- 1/2 c. Minced celery
- 1 tsp Minced garlic
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1/4 c. Sherry
- Combine first six ingredients in large pot.
- Add in 15 c. water, bring to a boil & simmer half-covered 8-10 hrs.
- Strain.
- Throw away meat bones, rind & spices; chill stock.
- In refrigerator, soak black beans in 10 c. water.
- Next day, cook onion & celery in 2 Tbs fat that has been removed from stock.
- Add in liquid removed beans, 2 additional c. water, 7 c. of the meat stock (all fat removed) & minced garlic.
- Simmer uncovered 2-1/2 hrs, stirring occasionally.
- If beans begin to show, add in more water.
- Push all through food mill.
- Reheat with salt, pepper & sherry.
- Serves 10.
