Best Ever Black Bean Soup Recipe

  1. Combine first six ingredients in large pot.
  2. Add in 15 c. water, bring to a boil & simmer half-covered 8-10 hrs.
  3. Strain.
  4. Throw away meat bones, rind & spices; chill stock.
  5. In refrigerator, soak black beans in 10 c. water.
  6. Next day, cook onion & celery in 2 Tbs fat that has been removed from stock.
  7. Add in liquid removed beans, 2 additional c. water, 7 c. of the meat stock (all fat removed) & minced garlic.
  8. Simmer uncovered 2-1/2 hrs, stirring occasionally.
  9. If beans begin to show, add in more water.
  10. Push all through food mill.
  11. Reheat with salt, pepper & sherry.
  12. Serves 10.
  13. TIME INCLUDES OVERNIGHT SOAKING
