Easy Shrimp And Artichoke Casserole Recipe
- 1/3 c. extra virgin olive oil
- 1 lg. onion, minced
- 1 pod garlic
- 1 bell pepper, minced
- 1 1/2 pound peeled shrimp
- 1 (15 ounce.) can artichoke hearts, minced, liquid removed
- 2/3 c. cooked rice
- 1/2 pound grated Jalapeno cheese
- Bread crumbs
- Salt and pepper
- Saute/fry onions, garlic and bell peppers in extra virgin olive oil till tender.
- Add in shrimp.
- Cover and simmer 10 to 15 min.
- Add in artichoke hearts, rice and cheese.
- Mix well.
- Salt and pepper to taste.
- Pour mix into 2-qt casserole dish.
- Add in bread crumbs and dot with butter.
- Bake at 350 degrees for 30 to 35 min.
