Chocolate Meringue Pie Recipe
- 3/4 c. sugar
- 3 tbsp. cornstarch
- 1/2 teaspoon salt
- 2 1/2 c. lowfat milk
- 2 sq. melted chocolate
- 3 egg yolks (set egg whites aside for meringue)
- 1 teaspoon vanilla flavor
- Combine sugar, cornstarch, and salt with lowfat milk; add in melted chocolate.
- Cook over warm water or possibly low heat till thickened.
- Beat egg yolks, add in a little of the warm mix to yolks.
- Return yolk mix to the first mix, stirring constantly.
- Remove from heat and add in vanilla.
- Pour into a baked pie shell.
- Top with meringue made by beating egg whites with sugar till stiff sufficient to hold peak.
- Place on pie, sprinkle some brown sugar on top of egg whites and brown in oven.
