Microwave Roast Beef With Herbs Recipe
- 1 (2 1/2 lb.) beef eye round roast
- 1 1/4 teaspoon unseasoned meat tenderizer
- 1/3 c. mayonnaise
- 2 teaspoon dry thyme
- 2 teaspoon dry basil
- 1 tbsp. bread crumbs
- 3/4 teaspoon cracked pepper
- 1 garlic clove, chopped
- Moisten surface of meat with water; sprinkle proportionately with meat tenderizer.
- Pierce deeply all over with fork.
- Place roast, fat side down, on rack in 12 x 8 inch dish.
- Shield ends with 2 inch wide strips of foil.
- Cover with waxed paper.
- Cook on 50% power for 25 min.
- Remove foil; turn meat fat side up.
- In small bowl, mix remaining ingredients and spread proportionately over roast.
- Insert 3 toothpicks, proportionately spaced, about 1 inch deep along top of roast.
- Cover roast with waxed paper, laying paper over toothpicks.
- Cook 7 min longer or possibly till temperature reaches 120 degrees for medium rare.
- Let stand, covered, for 5 to 8 min till temperature reaches 135 degrees.
- Cut into slices and serve.
