Microwave Roast Beef With Herbs Recipe

  1. Moisten surface of meat with water; sprinkle proportionately with meat tenderizer.
  2. Pierce deeply all over with fork.
  3. Place roast, fat side down, on rack in 12 x 8 inch dish.
  4. Shield ends with 2 inch wide strips of foil.
  5. Cover with waxed paper.
  6. Cook on 50% power for 25 min.
  7. Remove foil; turn meat fat side up.
  8. In small bowl, mix remaining ingredients and spread proportionately over roast.
  9. Insert 3 toothpicks, proportionately spaced, about 1 inch deep along top of roast.
  10. Cover roast with waxed paper, laying paper over toothpicks.
  11. Cook 7 min longer or possibly till temperature reaches 120 degrees for medium rare.
  12. Let stand, covered, for 5 to 8 min till temperature reaches 135 degrees.
  13. Cut into slices and serve.
