Steak and Fries
- 4 c. frozen shoestring French fried potatoes (from a 28-oz bag)
- 4 well-trimmed 3/4-in.-thick boneless beef rib-eye steaks (8 oz each)
- 1/2 c. crumbled blue cheese
- Heat oven to 450F.
- Line 2 rimmed baking sheets with foil and heat a large ridged grill pan over medium heat.
- Spread frozen French fries in a single layer on baking sheets.
- Bake 15 minutes or until crisp.
- Meanwhile sprinkle steaks with 1/2 tsp pepper.
- Place on grill pan; grill 3 minutes.
- Turn steaks over; scatter blue cheese on top.
- Grill 3 minutes more or until an instant-read thermometer inserted from side to middle registers 140F.
- Remove and let stand a few minutes (temperature will rise to 145F for medium-rare).
- If you don't have a large ridged grill pan, use 2 large nonstick skillets.
