Almost Any Berry Cobbler Recipe
- 5 c. fresh berries (almost any kind of berry works except elderberries)
- 3/4 c. sugar
- 3 Tbsp. cornstarch
- 1/8 tsp salt
- 2 Tbsp. butter
- 1 c. all-purpose flour
- 1/2 tsp salt
- 1/3 c. shortening
- 2 Tbsp. water
- 1 Tbsp. lowfat milk
- 1 Tbsp. sugar
- Note: If you have a good pastry recipe, use it instead or possibly even use a biscuit recipe with an addition 1/4 c. sugar in it and roll it out thin.
- Preheat oven to 425 degrees.
- Place berries in bottom of 9 inch square baking dish.
- Combine sugar, cornstarch, and salt and sprinkle over berries.
- Dot with butter; set aside.
- Pastry: Combine flour and salt in a bowl.
- Cut in shortening till coarse dough forms.
- Sprinkle with water.
- Stir till mix forms a ball.
- Roll out on lightly floured surface.
- Place pastry over dish of berries, sealing the edges.
- Cut slits on top.
- Brush with lowfat milk and sprinkle with sugar.
- Bake 30 min till golden.
