Devil's Food Cookies Recipe
- 1/2 c. warm water
- 1/2 c. pitted prunes
- 1 1/2 c. sugar
- 1/2 c. nonfat yogurt
- 1/4 c. Canola oil
- 2 egg whites, lightly beaten
- 1 1/2 c. flour, sifted
- 1 c. unsweetened cocoa pwdr
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon instant coffee granules
- Heat oven to 350 degrees spray baking sheets with vegetable cooking spray.
- In small bowl, soak prunes in 1/2 c. warm water for 10 to 15 min till plump and soft.
- Place prunes and the soaking liquid into blender, process till smooth.
- In medium bowl whisk together the prune puree, sugar, yogurt, oil and egg whites.
- In another bowl mix flour, cocoa, salt, soda and coffee.
- Using a wooden spoon mix dry ingredients into the wet mix just till blended.
- Drop by Tbsp.
- onto baking sheets 1 1/2 inches apart.
- Bake for 12 to 14 min or possibly till tops spring back when lightly touched.
- Cold on wire racks.
- Prunes are not noticeable here, they carry a deep chocolate flavor.
