Steak with Brandied Blue Cheese Sauce

  1. Heat skillet on high heat.
  2. Add steak; cook 4 to 5 min.
  3. on each side or until medium doneness (160F).
  4. Remove steak from skillet, reserving drippings in skillet; cover steak to keep warm.
  5. Add brandy to meat drippings in skillet; cook to deglaze skillet, stirring constantly to remove browned bits from bottom of skillet.
  6. Add beef broth; bring to boil.
  7. Reduce heat to medium-low; cook 3 to 5 min.
  8. or until broth mixture is slightly reduced, stirring constantly.
  9. Add cheese, cream and mustard; mix well.
  10. Cook until cheese is completely melted and mixture is well blended, stirring frequently.
  11. Cut steak into four pieces; place one piece on each of four serving plates.
  12. Top evenly with the cheese sauce; sprinkle with parsley.
