Mango Salsa Chicken
- 2 large boneless skinless chicken breasts (1 lb./450 g)
- 1 Tbsp. brown sugar
- 2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1 large mango, cut into 3/4-inch cubes Whole Foods 2 ea For $4.00 thru 02/09
- 1 avocado, cut into 3/4-inch cubes
- 1/4 cup Kraft Creamy Cucumber Dressing
- 1/4 cup chopped red onions
- 2 Tbsp. chopped fresh cilantro
- 2 tsp. oil
- Cut each chicken breast horizontally in half to make 2 thin pieces.
- Mix next 3 ingredients until blended; rub onto both sides of each chicken piece.
- Refrigerate 10 min.
- Meanwhile, combine all remaining ingredients except oil.
- Heat oil in large nonstick skillet on medium-high heat.
- Add chicken; cook on medium heat 4 min.
- on each side or until done (170 degrees F).
- Serve chicken topped with mango salsa.
