Bacon-Florentine Cheese Tart
- 36 round buttery crackers, finely crushed (about 1-1/2 cups)
- 3 Tbsp. butter or margarine, melted
- 5 slices OSCAR MAYER Bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 3/4 cup chopped red peppers
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup tightly packed fresh spinach leaves
- 3 eggs
- 1 cup milk
- 1 container (6.5 oz.) ATHENOS Spreadable Cheese, Garlic & Herb with Feta
- 2 Tbsp. flour
- 1/4 tsp. ground black pepper
- Heat oven to 400F.
- Mix cracker crumbs and butter until blended; press onto bottom and 1 inch up side of 9-inch springform pan sprayed with cooking spray.
- Bake 4 to 5 min.
- or until lightly browned.
- Remove from oven; reduce oven temperature to 350F.
- Cook and stir bacon and red peppers in large skillet on medium heat until bacon is crisp.
- Remove from skillet, reserving drippings in skillet.
- Add onions to drippings in skillet; cook and stir until crisp-tender.
- Add spinach; cook 4 min.
- or just until wilted.
- Blend eggs, milk, cheese, flour and black pepper in blender until well blended.
- Add spinach mixture; blend until smooth.
- Stir in bacon mixture; pour into crust.
- Bake 30 to 35 min.
- or until knife inserted in center comes out clean.
- Cool 15 min.
- Run knife around rim of pan to loosen tart; remove rim before serving.
