Pecan Pumpkin Bread Recipe
- 2 1/2 c. white flour
- 1 c. whole wheat flour
- 3 c. sugar
- 2 teaspoon baking soda
- 1 1/2 teaspoon salt
- 2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 4 Large eggs
- 1 c. veg. oil
- 2/3 c. water
- 16 ounce. can pumpkin
- 1 c. minced pecans
- Preheat oven to 350 degrees.
- Grease and flour bottoms only of two 9x5 loaf pans.
- Sift dry ingredients together and place in large bowl.
- In medium bowl combine oil, water, Large eggs and pumpkin.
- Add in to flour mix and mix well.
- Mix in pecans.
- Pour into prepared loaf pans.
- Bake at 350 degrees for 60-70 min or possibly till toothpick comes out clean.
- Cold 10 min then remove to cooling rack.
- Excellent served with soft cream cheese.
