Easy Beef Enchiladas
- 1 lb hamburger
- 2 cups four-cheese Mexican blend cheese
- 1 (2 1/2 ounce) can black olives
- 1 (16 ounce) can stewed tomatoes (I like the spicy mix)
- 1 (16 ounce) can enchilada sauce
- 1 (8 ounce) can tomato sauce
- 1 (12 ounce) can refried beans
- 12 cup water
- 1 (12 ounce) package flour tortillas
- 1 pinch salt
- 1 pinch black pepper
- 1.
- Brown burger the way you like it.
- I like to brown mine with the spices, of course, but I use Minced Onion instead of raw onion (mostly b/c it keeps better).
- I also like to add Mexican Spice, Cayan Pepper,and some Mrs.
- Dash.

- Drain burger.
- Then you add the tomatoes and refried beans.
- Mix together thorougly.
- Then add olives and tomato sauce to mix together again.

- Fill your tortillas.
- I place them in the cake pan before filling them, and roll them together when I am done.

- You may not use all of your mixture, so pour it over the top of the filled tortillas, if you wish.

- Next, I pour the enchilada sauce on top of that, and sprinkle the shredded cheese.
- You may want to use the whole package or not, I like it cheesy.
- I also add about a 1/2 cup of water too.

- Stick this pan into a preheated oven, 350 degrees for about 20 minutes.

- If you are like me, I make some spanish rice to put on the side, since I am not big on having rice inside of everything.
- Garnish with sour cream or guacamole to your heart's content.
