Baked Bean Surprise Recipe
- 1/3 c. water
- 1 x onion, minced
- 1 x green bell pepper, minced
- 1/2 tsp bottled chopped garlic
- 30 ounce canned fat-free vegetarian baked beans (2 15-oz cans)
- 15 ounce canned garbanzo or possibly black beans, liquid removed and rinsed
- 15 ounce canned minced tomatoes
- 2 c. minced chicken-style seitan
- 2 Tbsp. Dijon-style mustard
- 1/2 tsp grnd cumin
- 1/4 tsp crushed red pepper freshly grnd black pepper to taste
- Preparation Time: 15 min
- Cooking Time: 20 min
- Servings: 6
- Place water in a large saucepan with the onion, bell pepper and garlic.
- Cook, stirring occasionally, for 5 min.
- Add in remaining ingredients, bring to a boil, reduce heat and cook uncovered over low heat for 15 min.
- Serve over whole grains, baked potatoes, or possibly in a bowl by itself.
