Zuppa Tuscana Soup
- 10 cup water
- 7 chicken bouillon cubes
- 1 tsp salt
- 1 1/2 tsp crushed red pepper flakes
- 2 tsp garlic paste
- 1 lb russet potatoes-peeled &sliced or cubed
- 1 lb ground italian sausage
- 1 diced white onion
- 1 bunch fresh kale- torn to small pieces
- 1 cup heavy cream
- 6 tbsp oscar meyer bacon bits
- in a large stockpot put water, bouillon, salt, red pepper, garlic, and potatoes.
- cook on medium heat, stirring occasionally.
- saute the sausage and onion in a skilled until sausage is brown.
- add sausage to stockpot.
- add torn kale.
- simmer for 20-30 mins or until kale and potatoes are tender.
- add cream and bacon bits.
- simmer for 10 minutes.
- half/half can be substitute for heavy cream.
