Bistro Onion Soup Recipe

  1. Saute/fry onions in butter in a heavy 4 qt saucepan over medium heat, stirring often till golden brown, about 20-30 min.
  2. Stir in flour; cook 1 minute.
  3. Add in beef broth, wine, salt and pepper.
  4. Heat to boiling, reduce heat and simmer partially covered for 30 min.
  5. Spoon into oven proof bowls, place toasted bread and cheese on top and heat in broiler till bubbly brown.
