Apple Blueberry Bread Or Muffins Recipe
- 1/2 c. butter or possibly margarine
- 1 1/2 tsp Baking pwdr softened
- 1 c. Sugar
- 1/4 tsp Salt
- 2 x Large eggs
- 1/2 c. blueberries (to 1 c.) fresh or possibly frzn
- 1 c. Applesauce MOTT'S Regular
- 2 c. All-purpose flour
- Heat oven to 350F.
- Grease and flour 9x5-inch loaf pan.
- In large bowl, beat margarine, sugar and Large eggs till light and fluffy.
- Stir in apple sauce.
- Add in flour, baking pwdr, baking soda and salt, stirring just till moistened.
- Mix in blueberries.
- Spread into prepared pan.
- Bake at 350F for 55 to 60 min or possibly till toothpick inserted in center comes out clean.
- Remove pan to wire rack to cold 10 min.
- Remove from pan and cold completely.
- VARIATIONS: For Apple-Raisin Bread, substitute 1 c. raisins for blueberries.
- For Apple-Nut Bread, substitute 1 c. minced nuts for blueberries.
