Cheesy Broccoli Potato Soup
- 1 quart chicken broth
- 1 cup chopped onion
- 12 cup finely chopped celery
- 12 cup finely chopped carrot
- 2 cups cubed idaho potatoes
- 12 teaspoon celery seed
- 12 teaspoon dried thyme
- 2 cups small broccoli florets
- 1 cup milk
- 2 tablespoons cornstarch
- 2 cups shredded cheddar cheese
- salt and pepper
- Combine all ingredients except broccoli, milk, cornstarch, cheese, salt and pepper in slow cooker.
- Cover and cook on low for 6-8 hours, adding broccoli during last 30 minutes.
- Turn heat to high and cook 10 minutes, stirring in the combined milk and cornstarch, 2-3 minutes.
- Add cheese, stirring until melted, 2-3 minutes.
- Season to taste with salt and pepper.
