Fluffy Chocolate Mousse

  1. First make the base.
  2. Melt chocolate in a bowl.
  3. Add granola and mix until chocolate covers granola evenly.
  4. Pour into cups of your choice and cool in refrigerator.
  5. Work on the mousse.
  6. In a bowl, mix egg yolk and sugar.
  7. In a small saucepan, slightly warm milk.
  8. Soak the gelatin in water.
  9. After you warm the milk, add to the egg yolk bowl a little at a time.
  10. Once it's mixed pour it back into the small saucepan.
  11. Warm it over low to medium heat until it thickens (be careful with overheating as it can become hard).
  12. Remove from the heat and add gelatin to melt.
  13. In a bowl, break the chocolate into small pieces, and strain hot liquid from step 5 with a tea strainer.
  14. Mix with a whisk and melt chocolate.
  15. Use a bain-marie if it doesn't melt completely.
  16. Add brandy here.
  17. Loosely whip heavy cream.
  18. It thickens once it combines with the chocolate so make sure you whip it loose.
  19. Add step 8 into step 7 using a rubber spatula and fold gently.
  20. Mousse is ready.
  21. Pour liquid evenly into cooled cups and cool them in refrigerator.
  22. Decorate it in any way you want I decorated with homemade chocolate twigs ^^
  23. Mousse is fluffy.
  24. Granola is crispy.
