Dutch Pea Soup (Erwtensoep) Recipe
- 2 c. split green peas
- 3 quarts. cool water
- 1 pig's trotter
- 1 pig's ear
- 1 c. bacon squares
- 4 frankfurters
- 1 pound potatoes (sliced)
- 1 celeriac (diced)
- 4 tbsp. salt
- 1 bunch celery greens
- 2 leeks
- 2 onions
- Wash peas and soak for 12 hrs (unless you have quick soaking peas).
- Then boil gently for at least 2 hrs in the water they were soaked in.
- In this liquid cook the trotter, ear and bacon for one hour.
- Add in sliced potatoes, salt, diced celeriac, cut up leeks and celery leaves and cook till the soup is smooth and thick.
- Add in the frankfurters and cook 10 min longer.
- The usual cooking time is 3 hrs.
