Major's guilty chicken
- 6 chicken breasts
- 1 lb bacon
- 1 lb breakfast sausage
- flatten boneless/skinless chicken breasts
- on tin foil, lay several strips of bacon out
- place chicken breasts on bacon
- seperate sausage into 6 equal amounts
- place 1/6 of sausage on chicken
- roll chicken and bacon around sausage
- wrap with tin foil twisting ends tight
- repeat with remaining ingredients
- par boil tin foil packs for 20 minutes
- remove from water and tin foil
- place in refrigerator to set for 30 minutes to 1 hour
- in large fry pan finish cooking and crisp outter bacon layer
- let rest for 5 minutes
- slice into 3/4 inch medallions, cut on angle for prettier presentation
- serve with long grain or wild rice
